Artichoke Nails

I cook artichokes in a pressure cooker. It takes about 15 minutes for the 6" diameter ones. But even then, the outer leaves may be a bit waterlogged while the heart is still a bit, shall we say, crunchy.

Recently, we had an idea. What if we jammed an aluminum potato nail up through the stem before cooking? Well, we tried it and it's a success. The outside leaves weren't waterlogged. The heart was tender. And it only took 12 minutes.

As an unexpected bonus, the end of the nail, sticking out of the cut stem, drops nicely into the hole in the center of the pressure cooker's cooking rack, preventing the artichoke from falling over while cooking.

A little mayonnaise, a little tarragon vinegar... Ready to eat.
