Pupusas

Pupusas are a tasty Salvadorian specialty, made from a thick hand-patted tortilla stuffed with one or more of cheese, pork, beans, or loroco (a flower bud), then flattened and grilled.

Rich and I discovered pupusas when we first moved to beautiful Bay Area, California. Rich has always enjoyed Mexican food and we learned that Mexican / Salvadorian restaurants are popular around San Francisco. We prefer the pupusa revuelta (i.e. "mixed") containing a combination of pork and cheese.

Apparently, the making of pupusas in what is now El Salvador is at least two thousand years old. The dish migrated to the United States in the 1980s. Today, pupusas are traditionally served with a pickled cabbage relish (think cole slaw with vinegar instead of mayonnaise). We enjoy pairing this with fried plantains. Crispy outside, melty inside. Yum.
